Foraging at 7th rise with Stuart woodman
What an incredible experience we had at 7th Rise today. We spent half the day foraging in the hedgerows, pasture, woodlands, and along the seashore, guided by the talented Stuart Woodman. The day was crisp and clear, setting the perfect backdrop for a wild adventure. Apart from myself no one had been to 7th Rise before, and meeting everyone for the first time added to the sense of excitement and discovery.
Stuart, along with Kitty, curated a stunning 3-course lunch that showcased the best of nature. We started with a beautiful dish of slow-roasted beetroot, cured pigeon breast, cured cheese with sorrel, paired with pickled wild garlic; it was the perfect introduction to wild flavours.
For the main course, we enjoyed a deconstructed venison and wild mushroom cottage pie with lentils, served alongside black mustard leaves mash, cavolo nero with Cornish Seaweed flakes. The layers of flavours were simply stunning.
To finish, we indulged in a Kea plum posset that was both zesty and indulgent, leaving us all feeling perfectly satisfied.
Alongside these incredible dishes, we sipped on a delicate rosehip and hibiscus low alcohol tipple, which was as vibrant as the landscape we explored. The entire day was packed with inspiration, and the food was sensational, rich with bold, wild flavours.
